You have the ability to exclude mobile devices only, but unfortunately you can't disable tablets , Google now treat them as desktop devices.
Here's how to stop showing ads on mobile devices:-
Click the Campaign Setting tab,
Select Devices subtab,
Click the cell in the "Bid adj." column of the Mobile row you want to adjust.,
Enter a value -100% to opt out of mobile for the selected campaign.
